Typically, kitchari is part of the deeper Ayurvedic cleanse, Panchakarma. However, kitchari can also be prepared separately as a delicious warming and easily digestible winter meal. The nutrients from the food ingredients are easily absorbed so the body can heal itself.
WINTER KITCHARI
Serves 4-5
Ingredients:
- 1 c. split mung dal
- 1 c. brown basmati rice
- 1 & 1/2-piece fresh ginger, chopped
- 2 Tbsp. unsweetened shredded coconut
- 1 handful fresh cilantro leaves
- 1/2 c. purified water
- 3 Tbsp. ghee
- 2-inch piece of cinnamon bark
- 1/2 tsp. cumin
- 5 whole cardamom pods
- 5 whole cloves
- 10 black peppercorns
- 3 bay leaves
- 1/4 tsp. turmeric
- 1/4 tsp. sea salt
- 6 c. water
