Ayurvedic Winter Meal: Kitchari

Typically, kitchari is part of the deeper Ayurvedic cleanse, Panchakarma. However, kitchari can also be prepared separately as a delicious warming and easily digestible winter meal. The nutrients from the food ingredients are easily absorbed so the body can heal itself.

WINTER KITCHARI

Serves 4-5

Ingredients:

  • 1 c. split mung dal
  • 1 c. brown basmati rice
  • 1 & 1/2-piece fresh ginger, chopped
  • 2 Tbsp. unsweetened shredded coconut
  • 1 handful fresh cilantro leaves
  • 1/2 c. purified water
  • 3 Tbsp. ghee
  • 2-inch piece of cinnamon bark
  • 1/2 tsp. cumin
  • 5 whole cardamom pods
  • 5 whole cloves
  • 10 black peppercorns
  • 3 bay leaves
  • 1/4 tsp. turmeric
  • 1/4 tsp.  sea salt
  • 6 c. water
